Let us tell you a little secret…this is one of those wines that nobody likes to admit they enjoy! We have had more people try our White Cab expecting not to like a PINK wine, but have immediately fallen in love with it. For instance, during our recent visit to Oklahoma we were working the market with our distributor who had also invited another winery to town for the week. After two days of watching us pour our White Cab to adoring retailers, the other winemaker finally asked to try our wine. Afterward, he came back to us and admitted that he really did not want to like it, but he LOVED it…another convert!!!!
2007 is our third vintage producing White Cab. Our process is the traditional Old World method of allowing the grapes to “cold soak” with the skins for about 12 hours. We do nothing with the wine during this time, but wait. Once we have our desired color extraction we drain off the “free run” juice. In other words, we do not press the must to squeeze out all of the moisture.
We ferment at cold temperatures for nearly two weeks. This allows us to keep the fresh, ripe, bold flavors of our estate Cabernet. Over the next two months we rack the wine every week to clean out all of the sediments left from the crush and fermentation. Just prior to bottling we chill the wine down to near freezing to drop out the last remnants of tartaric acid in the wine. Finally we filter to pull out any undesirable bacteria and super-fine sediments.
We bottle in late January and let the wine rest for at least 90 days. In the middle of Spring, we release our new rose’ for all to enjoy. This 2007 White Cabernet has just a kiss of residual sugar that balances the superb acid backbone of the wine. The color is an exquisite fuchsia with edges in pale blue. The aroma jumps out of the glass and quickly fills a room with the scent of freshly picked strawberries. In the mouth, the wine gives more evidence of ripe, succulent strawberries. The finish is crisp and clean…perfect!
Serve Celestial White Cabernet chilled with grilled shellfish, salmon, spicy Asian cuisine or try it at your next picnic with hors d’oeuvres in place of your favorite white wine. You may just be our newest disciple telling all of your friends about your newest wine discovery. By the way, we will let you take all the credit!!!
